Peanut Thai Noodles

1/2 lb brown rice pasta                                                                      
1/2 sweet onion
2 tablespoons extra virgin olive oil
3 tablespoons red wine vinegar
3 tablespoons white rice vinegar
3 1/2 tablespoons brown sugar
2-3 garlic cloves minced
3/4 cup of water
salt & pepper to taste
2 teaspoons red pepper flakes (*optional)
3 tablespoons natural peanut butter (natural works best!)

This recipe was actually given to me by a good friend of mine.  I had tried to make this dish several times, but this is by far the perfect combination of ingredients!!

Chop and cook onion in olive oil until onions are translucent.  Add vinegars, brown sugar, garlic and water.  Mix in salt & pepper and red pepper flakes, if you like a little kick! Let cook for 3-4 minutes, and add peanut butter. I used natural crunchy peanut butter, which worked really well!!

Drain and rinse cooked noodles, and combine with sauce.  Like my friend suggested, cool in refrigerator for at least 30 minutes to allow the sauce to thicken.


Tastes great warm or cold!! I've also made this with cooked chicken which tastes great! Yumm!!
