2 cups of rice flour
1 teaspoon baking soda
1/4 teaspoon salt
4 eggs
2 cups mashed ripe bananas (4-5 medium)
1 cup sugar
2/3 cup canola or vegetable oil
1/4 cup almond milk
2 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans (optional)
I found this recipe on the Taste of Home website, but as usual, tweaked it a bit!!
This recipe calls for 2 cups of gluten free flour. I used rice flour and it turned out really well! The texture of rice flour is really fine, which makes it great for baking!!
Pre-Heat Oven to 350'
Combine flour, baking soda and salt into a mixing bowl. In another bowl mash 4-5 ripe bananas. Add in eggs 1 at a time, followed by the sugar, oil, almond milk, vanilla and nuts.
Combine dry ingredients into wet ingredients. Add slowly and mix until combined.
Coat 8" x 4" baking pan with non stick spraying oil, and pour batter into pan. Bake 40-45 minutes, or until knife comes out clean in the center. Make sure not to over cook it or it will turn out dry.
The banana bread is really great! My friends had no idea it was gluten free! Success!!
